Peg’s Kick-Ass Chicken
Stuff you’ll need:
2-3 lbs boneless skinless chicken breast cut into strips
˝ cup water
Greek seasoning (you can find this at the grocery store where the dry spices are)
1-˝ cups seasoned breadcrumbs (any flavor you like, they all work well)
˝ cup flour
˝ cup grated Parmesan cheese
1- 16-ounce block of cream cheese (softened)
Yellow and Dijon mustard
Combine two eggs, ˝ cup water and Greek seasoning (to taste, about two tbsp).
Soak chicken in this egg wash until ready to fry.
In a bowl, mix softened cream cheese, honey and both mustards (to taste). Set aside.
Mix breadcrumbs, flour, Parmesan cheese and 1 tbsp Greek seasoning in a pie tin. Dredge chicken in mixture and fry in vegetable oil at medium heat, turning frequently (use tongs so the coating stays in place).
Drain on paper towels.
Serve with cream cheese mixture as a dipping sauce.
Optionally, put drained chicken on foil lined baking sheet and sprinkle freshly shredded Parmesan over top. Melt under broiler and serve with dipping sauce. A real treat!
